Terroir & Vineyard
Viña Robles sources this Cabernet Sauvignon from three of its estate vineyards in Paso Robles: Creston Valley, Huerhuero and Bear Valley. The Huerhuero site lies in hilly terrain between the El Pomar and Geneseo Districts, benefitting from cooling Pacific breezes and calcareous subsoils. The Creston Valley vineyard features high terrain, southern exposure and shallow soils with granulated limestone. Bear Valley is located about fourteen miles from the Pacific and at higher elevation, yielding smaller, intensely-flavoured berries.

Winemaking
For the 2022 vintage, the fruit was hand-picked early in the morning for quality, then sorted using optical sorting at the winery. After destemming, crushing and temperature-controlled fermentations, the wine was aged for 20 months in French, Hungarian and American oak barrels.

Tasting Notes

• Appearance: Rich dark ruby/garnet in the glass.
• Aroma: A pronounced nose of blackcurrant (cassis), dark cherry, and plum, followed by hints of mocha, graphite, cedar and spice (coriander).
• Palate: Full-bodied with firm yet refined tannins. The core of dark fruit (cass­is, dark cherry, ripe plum) is framed by mineral underpinning and oak-driven nuance (mocha, cedar). The finish is elegant and long.

Food Pairing & Serving Suggestions

• Serving temperature: Aim for about 16-18 °C (60-64 °F). If the wine is opened early, consider decanting ~30 minutes to open the aromatics and soften the tannins.

• Grilled or roasted red meats—rib-eye steak with herb butter, lamb chops with garlic and rosemary.
• Braised beef, game dishes with rich sauces, or mushroom-dusted short ribs.
