  • Product Info

The Terah Wine Co. Skin-Contact Vermentino (sourced from the Clements Hills sub-AVA in Lodi, California) is a vibrant, small-production amber or "orange" wine. Crafted by sommelier-turned-winemaker Terah Bajjalieh, this low-intervention bottling serves as an approachable, refreshing gateway style that balances coastal Mediterranean texture with California energy.
    Tasting Notes

    • Aroma: Highly aromatic and expressive. The nose opens with bursting notes of gooseberry, tangerine, and grapefruit pith, quickly followed by nuances of thyme, lemongrass, and fresh fennel.
    • Palate: Textural and lively. Because it is fermented on its skins, the wine has a distinct boost in weight, structural tannins, and complexity. The palate blends a Corsican-style aromatic freshness with a Sardinian-inspired oiliness. You will find crisp layers of apricot and citrus fruits.
    • Finish: Bracingly clean, savory, and driven heavily by a distinct, almost salty Pacific coast salinity and crisp mineral finish.

    Technical & Vinification Details

    • Viticulture: Sourced from biodynamically and organically farmed vineyards in the Clements Hills sub-AVA. The terroir benefits from warm daytime temperatures countered by cooling delta breezes that lock in natural acidity.
    • Vinification: Natural and minimal-intervention. The wine is fermented using native yeasts and typically spends about two weeks on the skins to extract its terracotta hue, phenolic texture, and structure. A small portion is often pressed directly as a standard white wine and blended back in to heighten the freshness.
    • Aging & Bottling: It undergoes full malolactic fermentation and ages for roughly 5 months in stainless steel on its fine lees to retain precision. It is bottled unfined and unfiltered, meaning a light natural sediment may be present. ABV generally sits around 11% to 11.5%.
    Service & Food Pairings

    • Serving Tips: Serve chilled, but not ice-cold. Allowing it to warm up slightly in the glass helps unlock the herbal aromatics and phenolic skin-contact tannins. [1]
    • Food Pairings: This is a remarkably food-friendly, versatile wine. Its combination of light tannin, high acid, and salinity makes it an exceptional partner for:
      • Spicy and aromatic cuisines (such as Thai or Vietnamese dishes).
      • Rich appetizers like fresh burrata with heirloom tomato salad.
      • Seafood and shellfish pasta or lighter charcuterie boards
