    The 2023 Domaine Simon Bize et Fils Savigny-lès-Beaune 1er Cru 'Aux Vergelesses' Blanc is a beautifully precise and energetic expression of white Burgundy. Sourced from a highly exposed, south-by-southeast facing plot of ancient Chardonnay vines (originally planted in 1936), the 2023 growing season experienced a warm maturation period punctuated by beneficial August showers. Unlike the 2022 vintage, which steadily gained its shape toward the end of its barrel aging, the 2023 vintage carried a highly structured, vertical framework right from the start.
    True to the estate's low-intervention philosophy under Chisa Bize, this Chardonnay trades heavy richness for pure energy, deep dry extract, and strict mineral tension. 
    Aromatic Profile
    • Primary Fruit: A crystalline, pixelated bouquet highlighted by crisp white peach, sliced quince, and bright lemon zest. 
    • Minerality & Terroir: Deeply mineral aromatics featuring wet river stone, white marl, and a subtle, complex hint of crushed oyster shells. 
    • Florals & Accents: Subtle layers of white flowers and fresh green almonds emerge as the wine breathes, framed by a soft backdrop of dried honey. 
    Palate & Mouthfeel
    • Structure & Weight: Balanced with impressive concentration and an imposing mid-palate presence. The structural definition of the vintage gives the wine immediate direction and focus.
    • Texture & Acidity: A linear, direct attack driven by high energy and palpable tension. Aging in neutral, older barrels ensures that the palate carries fine body and texture without being overly marked or masked by oak flavors. 
    • Salinity: The classic "Aux Vergelesses" northern winds help preserve a sharp, savory line of salinity that slices through the ripe fruit extract. 
    Finish & Cellaring Potential
    • Finish: Remarkably long, dry, and elegant, leaving behind a fine mineral crunch and a lingering saline echo.
    • Drinking Window: Considered a "dark horse" of the vintage by top Burgundy critics, the structural lines are beginning to beautifully soften. While approachable with a hard decant, it is built to reward cellaring and will hit its peak window between 2027 and 2045
