The 2023 Domaine Pierre Guillemot Savigny-lès-Beaune 1er Cru "Aux Serpentières" is widely considered the estate's crown jewel. Sourced from an esteemed, south-facing Premier Cru vineyard with thin, stony clay-limestone soils, this Pinot Noir is crafted from old vines averaging 65 years of age. In the cellar, winemaker Vincent Guillemot captured the essence of the 2023 vintage beautifully, delivering a lighter, more immediate, and angelic style than the concentrated 2022s.Tasting Profile- Appearance: A beautiful, translucent pale rose or light crimson hue.
- Aroma: Exploding with a complex bouquet of ripe red cherries, sweet wild berries, orange zest, and fresh flower petals. As it opens, it shows subtle whole-cluster nuances of herbal tea, damp earth, and a faint hint of classic Burgundian barnyard funk.
- Palate: Fleshy yet ethereal, balancing a medium-to-full body with a remarkably delicate, powerful structure. The palate is flooded with alpine strawberries, crushed red fruit, and warm sweet spices.
- Finish: A stunningly persistent, “lip-smacking finish” punctuated by fine-grained tannins, vibrant minerality, and a lingering crushed strawberry note.
Winemaking DetailsThe Guillemot family has bottled this specific vineyard continuously for nearly eight decades:- Whole Cluster: Vincent Guillemot utilized 50% whole clusters (stems) across the cuvées in 2023, contributing to the wine's aromatic lift and fine-spun structure.
- Fermentation & Aging: The hand-harvested fruit is fermented in traditional open wooden tanks under strict temperature control. It is then aged in older barrels with a very modest percentage of new oak to protect the site's clarity.
- Purity: It is handled with absolute minimalism and bottled without fining.
Serving & Pairing- Service: Serve cool at 15–16°C (59–61°F). While it shows a beautifully expressive, "peacocky" charm in its youth, this specific cuvée is legendary for its ability to age seamlessly for decades.
- Pairing: This complex, savory Premier Cru pairs naturally with classic Burgundian dishes like coq au vin, roast duck, or herb-roasted pork loin. It also shines alongside earthy chanterelle or wild mushroom risottos
