Patrick Piuze approaches Chablis parcel by parcel, producing a series of wines designed to express the individual character of their sites rather than blending them into a single village cuvée.

Terroir de Fyé comes from a 2.5-hectare parcel surrounding a small château on the right bank of the Serein, close to Chapelot in Premier Cru Montée de Tonnerre and directly opposite Grand Cru Blanchots. Fermented and aged entirely in stainless steel, it is a particularly pure expression of Chardonnay and its Chablis terroir.

The 2025 is floral and mineral, with ripe stone fruit, citrus and a distinctly saline edge. There is lovely texture here, balanced by the freshness and precision that have made Piuze one of the most compelling names in modern Chablis.

A village-level Chablis from a particularly privileged piece of the appellation.

    Taste and Flavor Profile
Aromas: Delicate floral notes mixed with bright citrus and ripe pit fruits (like white peach or pear).
Palate: Crisp lemon zest, green apple, and star fruit backed by a tingling, energetic acidity and signature chalky, flinty minerality.
Food Pairings: Perfect with fresh oysters, scallops, seared fish, roasted white meats, or goat cheese.

    Winemaking & Vinification
Craftsmanship: Piuze treats this distinct parcel with high care, fermenting and aging the wine either in stainless steel or neutral oak to highlight pure site expression.
Philosophy: Minimal intervention to let the cold, fossil-rich limestone terroir take center stage.

    Terroir & Vineyard
Location: Sourced from a 2.5-hectare parcel surrounding a small château near the village of Fyé on the right bank of the Serein River.
Setting: Sits just opposite the Grand Cru Blanchots and close to the Premier Cru subclimates like Montée de Tonnerre (Chapelot) and Mont de Milieu.
Soil: Famous limestone-heavy Kimmeridgian soil (packed with fossilized ancient sea shells and limestone), which gives right-bank Chablis its distinct tension, chalky minerality, and energy.
