Patrick Piuze has built a reputation as one of Chablis’ most compelling modern producers, working with carefully selected parcels and emphasizing the individual character of each terroir. His village-level bottlings offer a fascinating opportunity to explore the differences between the villages and vineyard sites of Chablis.

The 2025 Terroirs de Fleys comes from vineyards around the small village of Fleys, east of the town of Chablis and close to some of the appellation’s excellent Premier Cru sites. It is a focused, mineral-driven expression of Chardonnay, combining bright citrus and crisp orchard fruit with subtle floral notes and the stony, saline character that makes Chablis so distinctive.

There is lovely tension here: fresh and energetic on the palate, but with enough texture and depth to make this considerably more than a simple everyday Chablis. A beautifully transparent expression of its origins and another excellent example of Patrick Piuze’s terroir-focused approach.
