Patrick Piuze has built a reputation as one of Chablis’ most compelling modern producers, working with carefully selected parcels and emphasizing the individual character of each terroir. His village-level bottlings are particularly interesting because they focus on specific sites rather than blending fruit from across the appellation.

The 2025 Terroir de Chichée comes from vineyards around the village of Chichée, just southeast of Chablis. It is a beautifully precise expression of Chardonnay, with notes of citrus, green apple and white flowers alongside the saline, chalky minerality that defines classic Chablis. Bright acidity keeps everything fresh and energetic, while there is enough texture and concentration through the middle to give the wine real presence.
