Terroir
Sourced from old vineyards in Castilla y León in north-central Spain, this wine reflects a rugged continental climate marked by hot summers, cold winters, and dramatic day-to-night temperature shifts. The vineyards are planted on a mix of limestone, clay, and rocky soils that naturally limit vigor and encourage concentrated fruit. The dry growing conditions and elevation of the region contribute to both ripeness and structure, producing wines with depth, intensity, and aging potential.Winemaking & Technical Notes
Created to commemorate the winery’s anniversary, this limited-production cuvée is crafted from carefully selected old-vine fruit and aged extensively to showcase long-term development and complexity. Fermentation is carried out in temperature-controlled tanks before maturation in oak barrels for an extended period, allowing the wine to integrate structure, spice, and tertiary nuance. The winemaking style emphasizes richness, refinement, and longevity while preserving the character of Castilla y León fruit.Tasting Notes
Deep garnet with subtle brick tones at the rim, the 2005 opens with evolved aromas of black cherry, dried plum, tobacco, cedar, leather, and baking spice. Layers of cocoa, espresso, and balsamic notes emerge with air, adding depth and complexity. The palate is full-bodied and mature, with softened tannins supporting flavors of dark fruit, dried herbs, earth, and oak spice. The finish is long, savory, and well-integrated, showing the graceful evolution of extended bottle age.Food Pairing & Service
A natural companion to hearty cuisine, this wine pairs beautifully with roasted lamb, braised beef, game dishes, and aged Manchego. It also complements mushroom-based preparations and slow-cooked Mediterranean dishes. Decant gently before serving to separate any sediment and allow the wine’s aromatics to fully open.Cellaring Potential
Now entering a mature and highly expressive stage, this wine still has the structure to continue developing over the next several years if stored properly. Expect increasing tertiary complexity and softer texture as the fruit continues to evolve into more savory and earthy characteristics. Name:
