The Grassi Wine Company "Valentina's Block" Sparkling Ribolla Gialla is a highly unique, micro-production sparkling wine crafted in the Napa Valley. While Ribolla Gialla is famously native to Friuli, Italy, estate owner Mark Grassi and consulting winemaker Maayan Koschitzky have adapted it beautifully to California. Produced via the traditional méthode champenoise, this bottle delivers remarkable structural weight and precision while showcasing the distinct phenolic traits of the variety.Tasting Notes- Aroma: The wine is “super expressive with notes of white flowers, tangerine, and green apples with a hint of nuttiness.” -- Grassi WIne Company. Aeration unveils deeper complexities of crushed limestone, honeysuckle, and fresh citrus zest.
- Palate: Medium-bodied and intensely vibrant. The mouthfeel features exceptionally refined, small bubbles (mousse). It displays a brilliant jolt of electric energy, balancing a very pronounced, crisp natural acidity with excellent mid-palate weight and a texturally rich framework.
- Finish: Crisp, bone-dry, and highly elegant. It finishes with a driving chalky minerality and an enduring, clean, savory snap.
Technical & Vinification Details- Viticulture: 100% Ribolla Gialla sourced entirely from the estate's Valentina's Block in Napa Valley. Grapes are night-harvested to capture pristine aromatics and high natural acidity.
- Vinification: The fruit undergoes whole-cluster pressing followed by a cold barrel fermentation with zero new oak influence. The base wine is aged in neutral barrels for 10 months.
- Sparkling Process: Crafted using the traditional method (methode champenoise). Following tirage, it undergoes secondary fermentation and remains on its fine lees before disgorgement.
- Dosage: Zero RS (Brut Nature). The bottles are topped using the estate’s private Solera barrel system, which has been maintained since 2017 to add complexity. Chemistry numbers sit at a vibrant 3.06 pH and roughly 12.6% ABV.
Service & Food Pairings- Serving Tips: Serve chilled around 8–9°C (48°F) in a traditional white wine glass rather than a narrow flute to fully appreciate its explosive, texturally driven aromatics.
