    94pts Falstaff
Strong salmon pink, copper coloured reflexes, very lively mousse. Fresh red forest berries, a hint of redcurrant, delicate yellow plum fruit, mineral-smoky background. Juicy, elegant, ripe cherry fruit, fine acidity, pleasant, well-judged fruit sweetness on the finish, a charming style with good length.

    Terroir
Sourced primarily from vineyards in the Côte des Bar in southern Champagne, this wine reflects a terroir rich in limestone and Kimmeridgian soils—similar to those found in Chablis. The region’s slightly warmer climate favors the ripening of Pinot Noir, resulting in grapes with both concentration and freshness.

This unique combination of soil and climate contributes to the wine’s structure, minerality, and aromatic intensity.

    Winemaking & Technical Notes
Made predominantly from Pinot Noir, the Rosé de Saignée is produced using the saignée (“bleeding”) method, where juice is briefly macerated with grape skins to extract both color and flavor.

Fermentation occurs in stainless steel to preserve purity, followed by traditional bottle fermentation in accordance with Champagne methods. The wine is aged on its lees to build texture and complexity, with minimal dosage to maintain freshness and authenticity.

Drappier is also known for its low use of sulfur and commitment to sustainable practices, enhancing the wine’s natural expression.

    Tasting Notes
Brilliant salmon-pink in color with fine, persistent bubbles, this Champagne opens with aromas of wild strawberries, raspberries, and red currants, accented by hints of rose petals, citrus zest, and subtle spice.

On the palate, it is fresh yet structured, with vibrant acidity and a creamy mousse. Flavors of red berries and stone fruit are complemented by a touch of minerality and a dry, elegant finish with impressive length.

    Food Pairing & Service
A versatile and gastronomic rosé Champagne, ideal with:

    • Charcuterie and cured meats
    • Grilled salmon or tuna
    • Duck and poultry dishes
    • Soft cheeses and light appetizers

Serve well chilled at 45–50°F (7–10°C). No decanting required.

    Cellaring Potential
While crafted for immediate enjoyment, the Drappier Rosé de Saignée Brut can develop additional complexity with short-term aging of 3–5 years. Over time, expect more nuanced notes of dried fruit, brioche, and spice.

Bold yet refined, the Drappier Rosé de Saignée Brut is a distinctive Champagne that delivers both character and elegance—perfect for celebrations or elevated everyday moments.
