    Terroir
Sourced from vineyards in Tavel, in the southern Rhône Valley, this wine reflects one of the only appellations in France dedicated exclusively to rosé production. The region’s warm Mediterranean climate, combined with stony, sandy, and clay-limestone soils, promotes full ripening while retaining freshness.

Tavel’s hallmark is its ability to produce rosés with both richness and structure, often more akin to light red wines in depth and ageability.

    Winemaking & Technical Notes
Domaine Respelido is crafted primarily from Grenache, supported by Syrah and other traditional Rhône varieties. A period of extended skin contact (longer than typical rosé production) gives the wine its deeper color and added structure.

Fermentation takes place in stainless steel to preserve freshness and fruit purity, resulting in a rosé that balances intensity with vibrancy.

    Tasting Notes
Deep coral-pink in color, this wine opens with aromas of cherry, red currant, and mandarin, layered with subtle floral and herbal notes.

On the palate, it is medium- to full-bodied for a rosé, with bright acidity and a rounded texture. Flavors of red berries, citrus, and a hint of spice lead to a fresh yet structured finish, often marked by a subtle mineral edge.

    Food Pairing & Service
A serious rosé designed for food, pairing beautifully with:

    • Grilled seafood, mussels, and salmon
    • Roast chicken and Mediterranean dishes
    • Pork, sausages, and lighter grilled meats
    • Vegetable dishes and Provençal cuisine

Serve at 50–55°F (10–13°C). No decanting required, though a brief chill rather than ice-cold service helps reveal its complexity.

    Cellaring Potential
Unlike most rosés, Tavel wines are known for their ability to age. Domaine Respelido can be enjoyed young for its vibrant fruit or cellared for 3–5 years, where it may develop additional savory and spice-driven complexity.

Bold, food-friendly, and distinctly Rhône in character, Domaine Respelido Tavel Rosé offers a deeper, more structured take on rosé—perfect for those seeking substance as well as refreshment.
