Aroma: Scents of white flowers, white peach, Mediterranean herbs, and faint oak.
Palate: Broad and creamy on the tongue, balanced by a sharp, crisp acidity.
Finish: Long, with a distinct saline (salty) and mineral finish.
Soil: "Llicorella" - This is a very old, flaky black slate. It drains water well and heats up under the sun. Think of llicorella like a rock heater for a lizard. It absorbs the sun's heat during the day and keeps the vines warm at night.
Altitude: 350 - 500 meters above sea level. High elevation helps the grapes keep their fresh, crisp acidity despite the hot Mediterranean sun.
Fermentation: Whole clusters of grapes are pressed together. They use indigenous yeasts (wild yeasts that naturally live on the grape skins instead of being bought in a lab) to start a very slow fermentation that can last anywhere from 3 to 9 months.
