Cazé-Thibaut 'Le Chemin des Plants' Extra Brut 2021 is a magnificent expression of artisanal Champagne craftsmanship, born from the chalky, sandy clay terroirs of Vandières on the storied right bank of the Marne Valley. This exquisite Blanc de Blancs is composed entirely of Chardonnay grapes, hand-selected from a single, meticulously tended parcel that captures the essence of its distinctive microclimate. Under the expert guidance of winemaker Fabien Cazé, these noble grapes undergo an extended maturation of 54 months in contact with their lees, a patient process that builds complexity, depth, and an elegant mineral character. The result is a wine of remarkable finesse and restraint, finished with a delicate dosage of just 2.2 g/L that allows the wine's natural acidity and refined structure to shine brilliantly. This is Champagne as it was meant to be—a testament to generations of viticultural knowledge and an unwavering commitment to quality over quantity.
