    Terroir
Sourced from estate vineyards in Treiso and the surrounding hills of Barbaresco, Ca’ del Baio’s Moscato vines grow on slopes shaped by ancient marine sediments—marl, sand, and veins of limestone that hold both warmth and moisture. These airy, sun-drenched exposures are ideal for Moscato Bianco, a grape that thrives when it can ripen slowly, retaining piercing aromatics while building natural sweetness. Cool nights drifting down from higher Langhe elevations help lock in acidity, an essential counterbalance for Moscato’s exuberantly floral and fruit-driven profile. The 2024 vintage benefited from a relatively mild growing season, with even ripening and excellent aromatic development, bringing unusual clarity and lift to the fruit.

    Winemaking & Technical Notes
Ca’ del Baio employs a rigorously gentle approach tailored specifically to Moscato’s delicate aromatics. The grapes are hand-harvested at dawn to preserve freshness, then moved quickly into the cellar for soft pressing. The must is chilled immediately to prevent premature fermentation, helping to safeguard the grape’s signature perfume. Fermentation occurs in pressurized stainless steel tanks via the Metodo Martinotti (Charmat-style), a process that allows the winemaker to maintain low alcohol, preserve natural grape sugars, and capture the light, frothy effervescence that defines Moscato d’Asti. Fermentation is stopped early through rapid chilling and filtration, aiming for an alcohol level around 5–5.5% and leaving abundant residual sugar. The 2024 bottling shows exceptional precision—clean, bright, and remarkably pure.

    Tasting Notes
A lifted, aromatic bouquet leaps from the glass: white peach, honeysuckle, jasmine blossom, pear nectar, crushed grapes, and a faint breeze of orange blossom honey. The palate is airy and silken, carried by a fine, gentle mousse that gives the wine a weightless quality despite its sweetness. Flavors echo the nose—ripe apricot, lychee, yellow pear, mandarin zest, and fresh white flowers—layered with a subtle minerality that keeps the wine from ever feeling cloying. The acidity is vibrant, precisely tuned, and beautifully integrated, gliding through the sweetness and leaving a finish that is clean, refreshing, and almost crystalline. The 2024 vintage stands out for its brightness, detail, and balance.

    Food Pairing & Service
Serve well-chilled, around 42–46°F (6–8°C), in a tulip or small white-wine glass to magnify aromatics without letting the mousse dissipate too quickly. This Moscato d’Asti excels with fruit-driven desserts—fresh berries, stone-fruit tarts, lemon ricotta cake, panna cotta, or lightly sweetened whipped cream. It’s also brilliant with savory-sweet pairings like spicy Thai cuisine, Sichuan peppercorn dishes, fried chicken with honey, or soft, creamy cheeses such as robiola or mascarpone. As an aperitif, it’s charming and festive; as a finale, it lifts any dessert course with brightness and perfume. The 2024 vintage is a perfectly poised, joyful expression of Moscato—light, floral, and irresistibly refreshing.
