This beautiful 2012 Champagne comes from the villages of Mesnil-sur-Oger, Chouilly, Cramant and Oiry. The wine is a tribute to Louis, Elisabeth Salmon’s brother, who was passionate about oenology. 25% of the wine was stored in oak vessels before disgorgement as this was aged on the lees for 115 months before disgorgement. It is powerful, dense and drop-dead gorgeous with its core of oyster shell and lemon oil alongside toasted hazelnut and its refined mousse. Full-bodied yet very nervy, enjoy this beautiful wine over the next fifteen plus years. Tasted: Jul 202497pts Vinous Media
The 2012 Brut Blancs de Blancs Louis Salmon is a large-scale, ample wine. A rich, heady Champagne, the 2012 has started to open nicely. It is far more expressive today than it was a year ago. Even so, this remains a very young Champagne, one that needs time to shed some of its considerable baby fat. Baked apple tart, dried flowers, mint and dried citrus peel are some of the many nuances that emerge over time. Tropical notes wrap around the substantial finish. Dosage is 3.9 grams per liter. Disgorged: January 2023.Mathieu Roland-Billecart continues to forge his own path at the family’s estate. Under his thoughtful leadership, today Billecart-Salmon offers a decidedly contemporary view of what Champagne is and what it can be. There is a great focus on quality, that is evident. Separately, dosage has come down significantly, as much as 50% for some wines, including the Brut Rosé, the Champagne that, for me, most identifies the house in broad terms. The production cycle in Champagne from concept to finished wine takes years, far longer than almost any other wine region in the world. For that reason, there is every reason the best is yet to come. - By Antonio Galloni on April 2025

The reference point of Billecart-Salmon’s contemporary direction, the 2013 Blanc de Blancs Louis Salmon, disgorged in January 2024 with four grams per liter dosage, stands as the most characterful wine of the new lineup, expressing itself from the glass with aromas of early-blooming white flowers, lemon oil, nashi pear and almond paste mingled with cardamom, oyster shell and freshly baked bread. On the palate, it is medium- to full-bodied and elegantly muscular, with a tensile core of crystalline purity, racy acids and ample chalky extract. Harvested in October, it derives from the communes of Cramant, Chouilly, Le Mesnil-sur-Oger and Oiry and was vinified entirely in stainless steel with full malolactic fermentation in pursuit of greater harmony in a cool-profile vintage such as this. It is slightly more elegant and simultaneously less powerful than the 2012 rendition, yet it remains equally compelling. Stylistically, it shares certain affinities with the 2008 and 1996 vintages, albeit with more fully realized ripeness. This report details the latest releases from Billecart-Salmon—among them the trio of vintage-dated cuvées, Rosé Élisabeth Salmon, Le Clos Saint-Hilaire and Nicolas François, as well as the 2019-based NV Le Blanc de Blancs. At the heart of this report, however, lies a 14-vintage retrospective of Blanc de Blancs Louis Salmon, including mature vintages dating back to 1988, revealing, without doubt, markedly different facets from the younger wines, yet showing no signs of deterioration.
The name of the cuvée Louis Salmon is itself a historical reference: he was Élisabeth Salmon’s brother and the brother-in-law of co-founder Nicolas François Billecart, and it was Louis Salmon who initially assumed responsibility for the house’s winemaking.
Even though the name of their vintage Blanc de Blancs has evolved over the years, the quality of contemporary releases has risen still further, as greater attention is devoted to agronomy, harvesting at optimal maturity and ongoing refinements in the cellar. These include the abandonment of second-hand barrels in favor of sourcing from cooperages directly, with new barrels first prepared using second-press wines before being employed for the élevage of wines destined for the cuvées covered here. Dosage has also been reduced, beginning with the 2009 rendition, in pursuit of greater purity; the sweetness that occasionally asserted itself on the finish in the past has largely disappeared, allowing the citrus fruit and salinity to emerge with greater clarity. In other words, these are wines of a more pronounced identity of place.
As readers will recall, Billecart-Salmon began converting its 100 hectares of estate-owned vineyards to organic farming in 2021 and received certification in 2024. In addition to these holdings, the house cultivates another 100 hectares under contract, from which it purchases fruit; on these parcels, the use of herbicides and chemical fertilizers has been eliminated since 2019. Furthermore, grapes are sourced from an additional 100 hectares that the house neither farms nor manages.
In the winery, the core principles remain unchanged: settling and fermentation at low temperatures, with an emphasis on preserving freshness; vinification is conducted predominantly in 47-hectoliter stainless steel tanks (with the exception of Le Clos Saint-Hilaire and Le Sous Bois, of course), complemented by smaller proportions vinified in wood (the cellar comprises some 400 barrels of 228 liters, 26 casks of 80 hectoliters and 11 demi-muids of 500 liters). Malolactic fermentation is partially blocked—an increasingly frequent practice in warmer vintages—and jetting at disgorgement is employed in the pursuit of greater consistency. The final selection of wines for each cuvée is determined by a blind tasting committee; consequently, the blends comprise both estate-grown and purchased fruit. Produced from top parcels of Chardonnay in the Côte des Blancs, this fine Champagne is impressive. It is rich and mature, the almond aroma and croissant flavor balanced by still bright citrus and minerality. It is a great wine, just right, ready to drink. Tasted: Dec 202496pts Decanter
Terroir
Cuvée Louis Blanc de Blancs is sourced from some of the most prestigious Chardonnay vineyards in the Côte des Blancs within Champagne. These Grand Cru villages—most notably Cramant, Chouilly, Mesnil-sur-Oger, and Oger—are celebrated for their pure chalk soils and cool climate, conditions that allow Chardonnay to develop extraordinary finesse, minerality, and longevity. The Côte des Blancs is defined by deep deposits of porous chalk, formed from ancient marine sediments. This chalk acts as a natural water reservoir, retaining moisture during dry periods while offering excellent drainage. At the same time, it reflects sunlight back toward the vines and moderates soil temperature, helping grapes ripen evenly while preserving vibrant acidity.
The 2012 vintage in Champagne is widely regarded as one of the finest of the modern era. After a challenging growing season marked by frost and hail in some areas, a warm and dry late summer allowed the remaining fruit to ripen beautifully. The resulting wines show exceptional concentration, precise acidity, and remarkable aging potential—qualities perfectly suited to a prestige Blanc de Blancs.
Winemaking & Technical Notes
Cuvée Louis Blanc de Blancs is produced exclusively from Chardonnay harvested from Grand Cru vineyards. Grapes are carefully hand-harvested and gently pressed to extract only the highest-quality juice. Primary fermentation takes place primarily in stainless steel tanks at controlled temperatures to preserve aromatic purity and freshness.Following fermentation, a portion of the wine may undergo maturation in older oak barrels to enhance complexity and texture without overshadowing the delicate fruit. The wine then undergoes secondary fermentation in bottle according to the traditional méthode champenoise.
One of the defining elements of Billecart-Salmon’s style is extended aging on the lees. The 2012 vintage spent many years resting on its lees before disgorgement, allowing the wine to develop remarkable depth, fine mousse, and layered complexity. The dosage is kept deliberately moderate, ensuring balance while preserving the wine’s natural freshness and mineral character.
Tasting Notes
The 2012 Cuvée Louis Blanc de Blancs pours a luminous pale gold with a persistent stream of exceptionally fine bubbles. The nose is refined and complex, opening with aromas of lemon zest, white peach, and green apple layered with delicate floral notes of acacia and hawthorn. With time in the glass, deeper notes of toasted brioche, almond, and chalky minerality begin to emerge. On the palate, the wine is elegant and precise, displaying a remarkable balance between freshness and depth. Flavors of citrus, orchard fruit, and white nectarine are complemented by subtle hints of pastry cream, hazelnut, and crushed limestone. The texture is silky yet vibrant, with a fine mousse that lends both energy and refinement.
The finish is exceptionally long and mineral-driven, leaving lingering impressions of citrus peel, toasted brioche, and chalky salinity—hallmarks of great Chardonnay from the Côte des Blancs.
Food Pairing & Service
Serve chilled at approximately 46–50°F (8–10°C) in a tulip-shaped Champagne glass to allow the wine’s aromas to develop fully. While this cuvée is extraordinary as an aperitif, its depth and structure make it particularly suited to refined gastronomy. It pairs beautifully with dishes such as oysters, scallops, lobster, or delicate white fish preparations. The wine’s precision and minerality also complement sushi, sashimi, and lightly cured seafood. For richer pairings, consider butter-poached lobster, roasted poultry with cream sauce, or aged cheeses such as Comté or Parmesan.
