The 2023 Paar Deux Cépages is a 50/50 blend of Pinot Blanc and Auxerrois from vines over 50 years old. The nose is a little shy and subtly creamy. The palate is bright, smooth and gentle but so fresh. This is a superbly clean-cut and immensely versatile. (Bone-dry) Drinking Window 2025 – 2028Mélanie Pfister delivered a focused, elegant and fresh collection of wines from the 2023 vintage. Pfister is grateful to have escaped any risk of spring frost. The unprecedentedly dry conditions in May and June were finally relieved by rain showers in late July and early August, but hot weather set in again in late August and lasted, with unseasonally high temperatures into September. Pfister explains, “It was such an early harvest, starting with Crémant base on September 6 and finishing in early October—quite a compact harvest.” The wines, as usual, are a picture of poise. Pfister’s 2023 Pinot Noirs, however, are exquisite. Managing her south-facing Pinot Noir vines in 2023 was especially tricky, and harvest point was crucial. Commendably, Pfister avoided any overripeness. Pinot Noir lovers must look out for Pfister’s Rahn Pinot Noir—an Alsace term that means “meager, skinny, slender,” all attributes that are advantageous in a now much warmer Alsace. The 2023 “Paar Deux Cépages” from Mélanie Pfister is rooted in the rolling hills of Alsace, a region renowned for its intricate mosaic of soils and its ability to produce wines of striking aromatic clarity and precision. The vineyards are located around the village of Dahlenheim, on the western edge of Alsace, where the influence of the Vosges Mountains plays a crucial role in shaping the climate.This area benefits from a semi-continental climate, characterized by warm, dry summers and relatively low rainfall due to the rain shadow effect of the Vosges. These conditions allow for a long, even growing season, enabling grapes to ripen fully while retaining freshness and acidity. Cool nights further enhance aromatic development, preserving the delicate nuances that define Alsatian wines.
The soils here are particularly diverse, composed of limestone, clay, and marl, often interspersed with sandstone. Limestone contributes tension and minerality, while clay and marl lend structure and depth. This geological complexity is especially well-suited to the blending of grape varieties, allowing each cépage to express itself while contributing to a harmonious whole.
“Paar Deux Cépages,” meaning “pair of two grape varieties,” reflects both the terroir and the philosophy of balance—drawing on complementary varietals to create a wine that is greater than the sum of its parts.
Winemaking & Technical Notes
Under the direction of Mélanie Pfister, the domaine follows a thoughtful, low-intervention approach that emphasizes purity, precision, and respect for the vineyard. Certified organic practices are employed, ensuring that the health of the soils and vines is maintained, and that the resulting fruit reflects its origin as transparently as possible.The blend typically combines two classic Alsatian varieties—often Riesling and Pinot Blanc or Pinot Auxerrois—though the exact composition may vary slightly by vintage. Each variety is harvested at optimal ripeness and vinified separately to preserve its individual character.
Fermentation is carried out with native yeasts in stainless steel tanks, allowing for a slow, controlled process that enhances aromatic expression. Temperature management is carefully monitored to retain freshness and clarity. The wine generally does not undergo malolactic fermentation, preserving its natural acidity and crisp profile.
Following fermentation, the wine is aged on fine lees for a period of several months, adding subtle texture and complexity without diminishing its vibrant character. The use of oak is avoided, ensuring that the focus remains on the interplay between fruit, acidity, and minerality.
Alcohol levels are typically moderate, around 12–13%, with a dry to off-dry profile depending on the vintage. The resulting wine is clean, expressive, and finely balanced, showcasing both varietal character and terroir-driven nuance.
Tasting Notes
The 2023 “Paar Deux Cépages” presents a pale straw color with green reflections, indicative of its freshness and youth. The nose is bright and inviting, offering a bouquet of citrus fruits—lemon, lime, and grapefruit—alongside crisp green apple and white peach.Floral notes of acacia and white blossom add lift, while subtle hints of wet stone and chalk introduce a mineral dimension. As the wine opens, delicate nuances of pear, quince, and a faint herbal edge emerge, adding complexity and depth.

“Paar Deux Cépages” 2023 is an exceptionally versatile wine at the table, thanks to its bright acidity and balanced structure. It pairs beautifully with a wide range of dishes, particularly those that highlight freshness and subtle flavors.Seafood pairings are a natural fit—consider oysters, mussels, grilled shrimp, or delicate white fish preparations. The wine’s acidity also makes it an excellent companion to dishes with citrus or light sauces, enhancing and refreshing the palate.
It works equally well with poultry, such as roast chicken or turkey, as well as with pork dishes that incorporate fruit or mild spice. Vegetarian pairings are abundant, including asparagus, salads, vegetable tarts, and dishes featuring fresh herbs.

The texture may become slightly rounder, while still retaining its core freshness.
While not intended for extended cellaring, a few years in bottle will reward those seeking a more evolved expression, offering added layers while maintaining the wine’s essential clarity and charm.
