    Terroir
    From the premier cru vineyard of Côte de Léchet in Chablis, this wine is rooted in classic Kimmeridgian limestone soils rich with fossilized marine sediments. These soils, combined with the vineyard’s sloping exposition, provide excellent drainage and optimal sun exposure, allowing Chardonnay to ripen while retaining its hallmark tension. The Vieilles Vignes parcels, planted to older vines, yield lower quantities of fruit with greater concentration and a pronounced mineral signature that defines the site.

    Winemaking & Technical Notes
    Produced from 100% Chardonnay, the fruit is hand-harvested and gently pressed to preserve purity and freshness. Fermentation takes place primarily in stainless steel to highlight the vineyard’s mineral-driven character, with a portion aged in neutral oak to add subtle texture without overshadowing the terroir. Extended lees aging enhances mouthfeel and complexity, while minimal intervention ensures a precise and transparent expression of Côte de Léchet.

    Pale gold in the glass, this wine offers a lifted, mineral-driven bouquet of citrus zest, green apple, and white peach, intertwined with notes of wet stone, oyster shell, and a hint of white flowers. On the palate, it is vibrant and focused, with crisp acidity carrying flavors of lemon, pear, and saline minerality. The texture is refined yet energetic, leading to a long, clean finish marked by chalky tension and subtle depth from the old vines.

    A natural partner for seafood, this Chablis shines alongside oysters, clams, and simply prepared white fish. It also pairs beautifully with goat cheese, sushi, or dishes featuring fresh herbs and citrus accents.
