    Terroir
Pierre Péters sources the fruit for Cuvée de Réserve exclusively from Grand Cru Chardonnay vineyards in the Côte des Blancs, primarily Le Mesnil-sur-Oger, Oger, Avize, and Cramant. These villages sit on some of the deepest, purest deposits of Cretaceous chalk in Champagne—porous, mineral-rich soils that allow deep root penetration and lend the wine its signature laser-like tension, salinity, and chalk-dust finesse. The cool, breezy mesoclimate of the Côte des Blancs ensures slow ripening, preserving vibrant acidity and delicately etched aromatics. This terroir produces Chardonnay that is both taut and expressive, delivering crystalline citrus, floral lift, and a mineral backbone that defines the house style. Because the Cuvée de Réserve is a blend of multiple vintages—including a high proportion of perpetual reserve wine—the expression of terroir here feels layered, complete, and deeply rooted in Côte des Blancs identity.

    Winemaking & Technical Notes
Made from 100% Chardonnay, the Cuvée de Réserve is crafted using a solera-like perpetual reserve system started decades ago by the Péters family. Each year’s new harvest is blended with a significant portion of this reserve cuvée, resulting in a Champagne of remarkable consistency and depth. Fermentation is conducted primarily in stainless steel to preserve purity and precision, followed by extended lees aging in bottle, often surpassing what is typical for a non-vintage wine. Malolactic fermentation is allowed, contributing to the wine’s signature creaminess without sacrificing brightness. The dosage sits firmly in the Brut range—low enough to maintain a clean, mineral-driven profile but high enough to round the texture. The mousse is famously fine and persistent, a hallmark of Péters’ gentle pressing and meticulous cellar work.

    Tasting Notes
This wine pours a pale, shimmering gold with a stream of impossibly fine bubbles. Aromas open with white peach, lemon zest, and crisp pear, layered with notes of brioche, almond cream, wet chalk, and white flowers. With air, hints of green apple, hazelnut, and oyster-shell salinity emerge. On the palate, the wine is precise, tensile, and elegantly creamy, balancing bright citrus energy with subtle lees-derived depth. Flavors of Meyer lemon, chalk, fresh pastry, and mineral spice glide across a palate that feels both weightless and substantial. The finish is long, lifted, and pure, marked by lingering chalk, citrus pith, and a gentle echo of toasted almond. It’s a benchmark Blanc de Blancs: airy, mineral, and completely refined.

    Food Pairing & Service
Serve at 46–50 °F (8–10 °C) in a tall tulip Champagne glass to highlight its minerality and complexity. No decanting is necessary, though the wine blossoms beautifully over 10–15 minutes in the glass. This cuvée pairs effortlessly with raw bar classics—oysters, prawns, fluke crudo, and tuna tartare—thanks to its chalky salinity. It also excels with more textural dishes like butter-poached lobster, scallops with citrus beurre blanc, or tempura vegetables. On the cheese front, pair with triple-cream brie, young goat cheese, or aged Parmesan for a beautiful interplay of richness and acidity. Enjoy now for its electric freshness or over the next 5–7 years for added depth and hazelnut nuance.
