    Terroir
Domaine de La Bretauche sources its Blanc de Blancs from cool-climate, limestone-influenced vineyards, where Chardonnay thrives under conditions that favor tension, precision, and mineral clarity. The vineyard sites benefit from moderated temperatures and ample diurnal shift, allowing for slow ripening and the preservation of natural acidity—an essential foundation for high-quality traditional-method sparkling wine.

The soils are dominated by chalky limestone and calcareous clay, contributing to the wine’s crisp structure and saline edge. These geological elements impart a distinctive mineral profile that carries through from aroma to finish. The terroir plays a central role in shaping a Blanc de Blancs style that emphasizes freshness, finesse, and purity over overt richness.

    Winemaking & Technical Notes
This wine is produced using the traditional method, with 100% Chardonnay forming the base of the cuvée. Grapes are harvested early to retain acidity and aromatic precision, then gently pressed to extract only the finest juice. Primary fermentation is carried out under temperature-controlled conditions to preserve freshness and varietal character.

The wine undergoes secondary fermentation in bottle and is aged on the lees for an extended period, building complexity, texture, and integration. Lees contact contributes subtle autolytic notes and a refined mousse, while dosage is kept restrained to highlight the natural balance between fruit, acidity, and minerality. The result is a Brut Blanc de Blancs that favors elegance and precision. Disgorged July 17, 2025

    Tasting Notes
The Brut Blanc de Blancs opens with a bright, focused aromatic profile. Notes of green apple, lemon zest, and white peach are complemented by hints of chalk, toasted brioche, and delicate floral tones. A subtle almond and citrus oil nuance emerges with aeration.

On the palate, the wine is crisp and finely textured, driven by vibrant acidity and a persistent, delicate mousse. Flavors of citrus, orchard fruit, and crushed stone unfold with clarity and energy. Lees aging lends a gentle creaminess through the mid-palate, balancing the wine’s linear structure without softening its precision.

The finish is long, clean, and mineral-driven, with lingering citrus and saline notes that underscore the wine’s refreshing character. The overall impression is one of finesse and restraint, making it both versatile and compelling.

    Food Pairing & Service
Domaine de La Bretauche Brut Blanc de Blancs is an excellent pairing for oysters, shellfish, and light seafood preparations, as well as fresh goat cheese, sushi, and delicate appetizers. Its crisp acidity and mineral focus also make it a refined aperitif.

Serve well-chilled at 45–48°F (7–9°C) in a tulip-shaped sparkling wine glass to preserve aromatics and mousse. The wine is ideal for immediate enjoyment but can continue to develop additional complexity over 3–5 years of cellaring.
