    Winemaking & Technical Notes
    This cuvée blends Chardonnay with a touch of Pinot Noir, all harvested by hand and pressed gently to preserve purity. Fermentation occurs in temperature-controlled stainless steel to maintain bright aromatics, followed by an extended second fermentation and aging on lees for roughly 24 months—far longer than required by DOCG rules.
