After hand-sorting and gentle destemming, the wine undergoes a cool soak followed by fermentation in stainless steel with daily pump-overs to maximize aromatics and color while preserving elegance. It is then aged for roughly 18 months in a high proportion of French oak (a mix of new and second-use barrels), lending cedar, cocoa, and baking-spice accents without overwhelming the fruit.
