These terraces, often difficult to access and farm, yield low quantities of intensely concentrated fruit.

    The defining feature of Priorat is its llicorella soil—a distinctive mix of fractured slate and quartz that reflects sunlight and retains heat while offering exceptional drainage. This harsh, nutrient-poor environment forces vines to struggle, producing small berries with thick skins and deeply concentrated flavors. The mineral imprint of these soils is unmistakable, often expressed as graphite, smoke, and a subtle saline edge.

    The Mediterranean climate is marked by hot, dry summers and limited rainfall, conditions that naturally reduce yields and enhance concentration.     Produced by Familia Torres, “Salmos” is crafted with a philosophy that combines respect for tradition with modern precision. The wine is named in homage to the Carthusian monks who historically cultivated vineyards in Priorat, and it reflects both heritage and contemporary refinement.

    Grapes are harvested by hand and carefully sorted to ensure optimal quality. Each variety and vineyard parcel is vinified separately, allowing for greater control over extraction and preserving the individuality of each component.

    Fermentation takes place in stainless steel tanks at controlled temperatures, enabling a gradual extraction of color, tannin, and flavor while maintaining aromatic clarity. Maceration is carefully managed to build structure without overwhelming the wine’s balance.

    Following fermentation, the wine is aged in French oak barrels—primarily a mix of new and used oak—for approximately 14 to 16 months. This élevage adds layers of complexity, integrating notes of spice, cocoa, and toast while allowing the fruit and mineral character to remain at the forefront.

    The final blend centers on Garnacha and Cariñena, with small proportions of Syrah contributing additional depth and aromatic nuance. Alcohol levels are 14%, supported by firm tannins and a balanced acidity that ensures both structure and longevity.
