“Selezione Antonio Castagnedi” represents a more structured and concentrated expression of Valpolicella, crafted from a blend of traditional varieties, 70% Corvina/Corvinone, 20% Rondinella, 5% Croatina, and 5% Oseleta.At Tenuta Sant'Antonio, the grapes undergo a partial drying process (appassimento), where they are left to dehydrate slightly before fermentation. This technique concentrates sugars, flavors, and phenolic compounds, resulting in greater depth and richness.
Fermentation takes place in temperature-controlled stainless steel tanks, with extended maceration to extract color, flavor, and structure. The wine is then aged in oak barrels—typically a combination of French tonneaux and larger casks—for an extended period, often 18–24 months. This élevage allows the wine to develop complexity while integrating tannins and oak influence.
The resulting wine is full-bodied, with elevated alcohol (typically around 14.5–15%), supported by balanced acidity and a firm structural backbone.
