    "The 2025 Cuvée-Syrah, tasted from tank just prior to bottling, is packed with inky dark fruit, lavender, menthol, licorice, chocolate, spice and a good deal of whole-cluster savoriness. Boisterous and juicy, the 2025 is a total delight. A whole range of floral and spice notes punctuate the finish. The 2025 was done with 100% stems and was aged mostly in neutral 500-liter barrels. It is an astonishingly good wine made in a style meant to be very friendly in terms of both approachability and price."

    Pax Mahle’s ‘Cuvée Syrah’ represents a blend of fruit sourced from several cool-climate vineyards across Northern California, with many parcels located in the windswept hills of the Sonoma Coast and surrounding appellations. These coastal vineyards benefit from persistent Pacific fog, strong maritime breezes, and dramatic day–night temperature swings that allow Syrah to ripen slowly while preserving vibrant acidity and aromatic complexity.

    The soils across these sites vary from sandy loam to fractured shale and volcanic deposits, each contributing its own dimension to the blend. These lean, well-drained soils naturally limit vine vigor, producing small berries with concentrated flavor and balanced phenolic structure. The 2025 vintage offered consistent sunshine with cool evenings, enabling the grapes to develop deep fruit character while retaining the savory, peppery edge that defines cooler-climate Syrah.

    Winemaking & Technical Notes
    The ‘Cuvée Syrah’ is crafted as a multi-vineyard blend designed to highlight the diversity of Northern California’s coastal Syrah sites. Grapes are harvested by hand and sorted carefully before fermentation. Pax Mahle is known for employing traditional, low-intervention techniques—often incorporating a significant portion of whole-cluster fermentation, which adds aromatic lift, structural tension, and the distinctive spice notes that characterize the wine.

    Fermentation occurs with native yeasts in open-top fermenters, allowing gentle extraction and preserving the vineyard character of each component. Following fermentation, the wine is aged in neutral French oak barrels for approximately 10–12 months. The use of largely neutral oak ensures that wood influence remains subtle, allowing the purity of fruit and savory mineral elements to take center stage. The final blend is assembled to achieve balance between fruit intensity, acidity, and structure.

    Tasting Notes
    In the glass, the 2025 ‘Cuvée Syrah’ presents a deep ruby-purple color with vibrant clarity. The nose is immediately expressive and layered, offering aromas of blackberry, black plum, and blueberry intertwined with cracked black pepper, smoked meat, and violet. Hints of olive tapenade, dried herbs, and crushed stone emerge with aeration, adding complexity and depth.

    On the palate, the wine is medium to full-bodied with impressive energy. Dark fruit flavors dominate the entry—blackberry, cassis, and plum—while savory elements of pepper, charred herbs, and subtle earthiness build through the mid-palate. Whole-cluster fermentation contributes a lifted aromatic quality and a fine-grained tannic structure, giving the wine both tension and elegance.

    Serve at approximately 60–65°F (16–18°C) and consider decanting for 30–60 minutes to allow the aromatics to fully open. This Syrah pairs beautifully with grilled lamb chops, braised short ribs, and roasted game meats. The wine’s peppery and savory character also complements dishes featuring herbs such as rosemary and thyme.

    Although approachable in its youth due to its vibrant fruit and balanced acidity, the 2025 ‘Cuvée Syrah’ has the structure to evolve beautifully over time. The combination of whole-cluster fermentation, firm yet refined tannins, and bright acidity provides a solid framework for aging.

    Properly cellared in a cool, dark environment, the wine should develop additional complexity over the next 8–12 years. As it matures, the fresh dark fruit will gradually give way to more savory notes of leather, dried herbs, smoked meat, and forest floor.
