    The 2018 Cabernet Sauvignon from Kanonkop Estate is rooted in the granitic slopes of Stellenbosch, one of South Africa’s most historic and prestigious wine regions. Situated on the lower foothills of the Simonsberg Mountain, the estate benefits from a combination of elevation, aspect, and maritime influence that together shape wines of depth and structure.

    The vineyards are planted on decomposed granite soils, which provide excellent drainage while encouraging deep root penetration. These soils naturally limit vine vigor and contribute to the concentration and structure that define Kanonkop’s wines. The granite also imparts a subtle mineral edge, adding tension and longevity to the Cabernet Sauvignon.

    The climate is Mediterranean, with warm, dry summers and cooling afternoon breezes that moderate temperatures during the ripening period. This balance allows for full phenolic ripeness while preserving acidity, essential for crafting structured yet balanced Cabernet.

    The 2018 vintage was shaped by a period of drought in the Cape, resulting in lower yields but highly concentrated fruit. Careful vineyard management ensured that the grapes achieved optimal ripeness, producing a wine of intensity, precision, and strong aging potential.

    At Kanonkop Estate, Cabernet Sauvignon is approached with a philosophy rooted in tradition, precision, and minimal intervention.

    The grapes are harvested by hand and meticulously sorted before fermentation. Fermentation takes place in open-top concrete fermenters, with regular punch-downs to gently extract color, flavor, and tannin while preserving balance.

    Following primary fermentation, the wine undergoes extended maceration to build structure and depth. It is then aged in French oak barrels for approximately 24 months, with a significant proportion of new oak contributing layers of spice, cedar, and structure while integrating the wine’s robust tannins.

    The wine is bottled with minimal filtration to preserve its full character. Alcohol levels typically fall around 14.5%, supported by firm acidity and a powerful tannic backbone.

    This traditional approach results in a Cabernet Sauvignon that reflects both the strength of Stellenbosch terroir and the age-worthy style for which Kanonkop is renowned.

    Tasting Notes
    The 2018 Kanonkop Cabernet Sauvignon displays a deep, opaque ruby color with garnet edges beginning to emerge. The nose is intense and layered, opening with aromas of blackcurrant, blackberry, and plum, interwoven with notes of graphite, cedar, and tobacco.

    With time in the glass, more complex elements develop—dark chocolate, dried herbs, and a subtle earthy nuance add depth, while hints of spice and oak-derived vanilla provide warmth and structure.

    On the palate, the wine is full-bodied and powerful, with a dense core of dark fruit supported by firm, well-defined tannins. Flavors of cassis, black cherry, and plum are complemented by notes of cocoa, spice, and a distinctive mineral edge.

    The structure is bold yet balanced, with acidity providing lift and precision. The tannins are substantial but finely grained, promising excellent evolution with time.

    Food Pairing & Service
    Serve at 60–65°F (15–18°C) in a large Bordeaux-style glass. Decanting for 1–2 hours is strongly recommended, particularly in its current stage, to allow the wine to open and soften.

    This Cabernet Sauvignon pairs best with rich, structured dishes. Grilled or roasted beef—such as ribeye, strip steak, or filet—highlights the wine’s tannins and depth. It also complements lamb dishes, especially those prepared with herbs or slow-roasted preparations.
