    The Y3 “Taureau” hails from meticulously farmed vineyards in the high-elevation sites of Napa Valley, where rocky soils and significant diurnal temperature swings foster small, intensely flavored berries. The combination of volcanic and alluvial soils provides excellent drainage, natural stress for the vines, and a pronounced mineral backbone.

    The 2022 vintage in Napa offered warm, consistent ripening conditions with cooler nights, allowing for phenolic maturity while retaining bright acidity. These conditions yielded grapes with concentrated flavors and structural integrity, ideal for crafting a bold yet refined red.

    Winemaking & Technical Notes
    Y3 “Taureau” is a Bordeaux-style blend, dominated by Cabernet Sauvignon, with supporting Merlot, Cabernet Franc, and Petit Verdot. Grapes are hand harvested and rigorously sorted before fermentation in small lots to ensure precision and purity.

    Fermentation is conducted with careful temperature management and gentle extraction through punch-downs and pump-overs, balancing depth and finesse. The wine is aged 18–22 months in French oak barrels, a significant portion new, allowing tannins to integrate while enhancing aromatic complexity with subtle layers of cedar, graphite, and dark spice.

    Minimal intervention in the cellar ensures that vineyard character and varietal expression remain central.

    Tasting Notes
    The 2022 “Taureau” pours a deep, opaque garnet with violet highlights. Aromas are rich and layered: blackberry, cassis, and black plum mingle with graphite, dark chocolate, and hints of baking spice. Subtle floral undertones of violet and a faint herbaceous note add complexity.

    On the palate, the wine is full-bodied and structured, with concentrated dark fruit framed by fine, polished tannins. Bright acidity balances the richness, while secondary notes of espresso, cedar, and tobacco leaf deepen the profile. The finish is long, persistent, and mineral-driven, carrying a harmonious interplay of dark fruit and spice.

    Food Pairing & Service
    Serve at 60–65°F and decant for 60–90 minutes to allow full aromatic expression. Y3 “Taureau” pairs beautifully with grilled ribeye, roasted lamb, braised short ribs, or venison. It also complements hearty vegetable stews and aged cheeses with firm textures.

    Its balance of power and elegance makes it suitable for both richly flavored and nuanced dishes.

    Cellaring & Longevity
    The 2022 “Taureau” is built for long-term aging. While approachable with decanting, optimal drinking is expected from 2027 through 2040. Over time, primary dark fruit will evolve toward dried blackberry, leather, and graphite, gaining aromatic complexity and textural refinement.

    Properly cellared, the wine will develop for 15–20+ years, maintaining its structural integrity and expressive Napa mountain character.
