Terroir
Goldschmidt’s The Verge Cabernet Sauvignon 2021 is rooted in the benchland soils of northern Alexander Valley, where gravelly loam, fractured rock, and excellent drainage create naturally low–yielding vines with concentrated fruit. The site sits at the cusp—or “verge”—between valley floor warmth and hillside diurnal shifts, giving the grapes long, even ripening and structural finesse. Summer days are characteristically warm but moderated by cool nights, which sharpen acidity while preserving aromatic purity. The combination of older Cabernet plantings and well-exposed parcels results in fruit of generous ripeness but also tension, minerality, and surprising freshness.Winemaking & Technical Notes
The 2021 vintage was marked by small berries and high phenolic concentration, offering exceptional raw material for a structured, cellar-worthy Cabernet. Goldschmidt practices careful cluster selection and gentle extraction to maintain tannin refinement rather than heaviness. Fermentation typically occurs in stainless steel to retain varietal clarity, followed by aging in a mix of French and American oak—largely seasoned barrels, with a smaller portion of new oak to add framing spice without overwhelming the purity of the fruit. The élevage emphasizes integration, polish, and a supple mid-palate while preserving firmness and age-worthiness. The wine is bottled with minimal filtration to maintain depth and texture.Tasting Notes
The 2021 The Verge opens with a deeply expressive nose of blackcurrant, blackberry compote, crushed violets, and cedar, intertwined with subtle graphite and tobacco leaf. On the palate it is broad yet controlled, delivering layers of black cherry, cassis, dark plum, and cocoa powder. A vein of savory minerality runs through the core, lifted by notes of baking spice, vanilla bean, and a hint of dried sage. The tannins are fine but assertive, forming a structured frame that carries the fruit through a long, resonant finish marked by mocha, ripe berries, and a lingering touch of licorice. It strikes a compelling balance between richness and precision—classic Alexander Valley Cabernet with a modern sense of polish.Food Pairing & Service
This Cabernet’s depth and tannic structure make it ideal for robust pairings such as grilled ribeye, braised short ribs, rosemary-garlic lamb chops, or smoked brisket. It also excels alongside earthy components: wild mushrooms, roasted root vegetables, or aged Gouda. For a more elevated pairing, consider duck breast with blackberry reduction or venison with juniper. Serve at 60–65°F after a 45–60 minute decant while young; the wine will continue to evolve beautifully over the next 10–15 years. Name:
