Terroir
The 2021 Dagromis Barolo from Gaja is a compelling expression of two historic crus within Barolo—La Morra and Serralunga d’Alba—each contributing distinct elements to the wine’s structure and personality. Situated in the heart of Piedmont, these vineyards reflect the nuanced diversity that defines Barolo.La Morra, known for its calcareous marl soils, contributes elegance, aromatic lift, and softer tannins. In contrast, Serralunga d’Alba, with its more compact, clay-rich and limestone soils, imparts structure, depth, and longevity. The combination of these two terroirs results in a Barolo that balances finesse and power.
The region’s continental climate plays a crucial role. Warm summers allow Nebbiolo to ripen fully, while cool autumn nights preserve acidity and enhance aromatic complexity. Frequent morning fogs—nebbia, from which Nebbiolo takes its name—help moderate ripening and contribute to the grape’s distinctive character.
The 2021 vintage is widely regarded as exceptional in Piedmont, marked by a balanced growing season that yielded fruit of both concentration and precision. The terroir ultimately expresses itself in a wine that is structured, aromatic, and deeply reflective of its origins.
Winemaking & Technical Notes
At Gaja, under the guidance of Angelo Gaja, the approach to Barolo is one of precision and respect for tradition, combined with a modern sensibility that emphasizes clarity and balance. The Dagromis bottling is sourced from estate vineyards in La Morra and Serralunga d’Alba, with each parcel vinified separately. Grapes are hand-harvested and carefully sorted before fermentation.
Fermentation takes place in stainless steel tanks at controlled temperatures, allowing for a gradual extraction of color, tannin, and aromatic compounds. Maceration is carefully managed to build structure while maintaining finesse, avoiding excessive harshness.
Following fermentation, the wine is aged in oak for approximately 24 months, typically using a combination of large Slavonian oak casks and smaller French oak barrels. This dual approach allows for both integration and subtle complexity, without overwhelming the wine’s varietal purity.
The wine is then further refined in bottle prior to release. Alcohol levels generally fall around 14–14.5%, supported by Nebbiolo’s naturally high acidity and firm tannic structure.
The result is a Barolo that marries traditional structure with a polished, modern expression—accessible yet built for aging.
Tasting Notes
The 2021 Dagromis Barolo presents a luminous garnet color with ruby highlights, characteristic of Nebbiolo. The nose is intensely aromatic and layered, opening with notes of rose petal, red cherry, and raspberry, complemented by hints of orange peel and dried cranberry. As the wine evolves, more complex nuances emerge—tar, tobacco, and dried herbs are interwoven with subtle notes of licorice, spice, and earthy undertones. A distinct mineral edge adds depth and definition.
On the palate, the wine is medium to full-bodied, with a structured yet refined profile. A core of bright red fruit is framed by firm, finely grained tannins that provide both grip and elegance.
Flavors of cherry, red plum, and cranberry are complemented by savory and floral elements, creating a layered and dynamic palate. The acidity is vibrant, lending energy and lift while balancing the wine’s structure.
The finish is long and persistent, marked by lingering notes of red fruit, spice, and a characteristic earthy complexity. The overall impression is one of balance and precision, capturing the dual nature of its terroir—elegant yet powerful.
Food Pairing & Service
Dagromis Barolo 2021 calls for refined, savory dishes that can match its structure while complementing its aromatic complexity. It pairs beautifully with braised meats such as beef short ribs or veal shank, where the wine’s tannins and acidity cut through richness while enhancing depth of flavor. Traditional Piedmontese dishes—such as tajarin with truffle or mushroom risotto—are equally compelling, echoing the wine’s earthy and floral notes.
For a classic pairing, consider roasted lamb with herbs or aged cheeses like Parmigiano-Reggiano, which highlight the wine’s structure and nuance.
Serve at 60–65°F (15–18°C) in a large Burgundy or Nebbiolo glass. Decanting for 1–2 hours is highly recommended in its youth to allow the wine to fully open and soften.
Cellaring Potential
The 2021 Dagromis Barolo possesses excellent aging potential, with the structure and balance to evolve over the next 15–25 years. In its youth, the wine is defined by its firm tannins and vibrant acidity, but with time, it will develop remarkable complexity. Primary fruit will give way to tertiary notes of dried rose, leather, tobacco, and forest floor, while the tannins become more integrated and silky.
The wine’s underlying structure ensures longevity, allowing it to evolve gracefully while maintaining its core identity. For those willing to cellar it, this Barolo offers a profound and rewarding expression of Nebbiolo over time.
