The 2020 “Fusion V” from De Toren Private Cellar is rooted in the coastal vineyards of Stellenbosch, one of the country’s most renowned regions for Bordeaux-style blends. Situated within South Africa, Stellenbosch offers a compelling combination of maritime influence, varied topography, and complex soils that together create ideal conditions for structured, age-worthy red wines.The vineyards benefit from proximity to False Bay, where cooling ocean breezes moderate the warm daytime temperatures. This maritime influence extends the growing season, allowing grapes to ripen slowly while preserving acidity and aromatic complexity. The resulting fruit achieves both concentration and balance, avoiding excessive ripeness.
Soils in the region are primarily decomposed granite, often mixed with clay and sandstone. These well-draining yet moisture-retentive soils promote deep root systems and controlled vine vigor, leading to small berries with thick skins and intense flavor concentration. The variation in soil composition across vineyard blocks allows each Bordeaux variety in the blend to be planted in optimal conditions, contributing to the wine’s layered structure.

At De Toren Private Cellar, “Fusion V” represents a meticulous approach to Bordeaux-style blending, combining traditional methods with modern precision. The wine is composed of the five classic Bordeaux varieties—Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, and Petit Verdot—each vinified and aged separately before final blending.Grapes are hand-harvested and undergo rigorous sorting to ensure only the highest quality fruit is used. Fermentation takes place in small stainless steel tanks, allowing for precise control over temperature and extraction. Gentle pump-overs and punch-downs are used to build structure while maintaining elegance.
Each component is aged in French oak barrels, with a significant proportion of new oak, for approximately 12 to 18 months. This élevage contributes layers of spice, cedar, and texture, while allowing the individual varietals to develop complexity.
The blending process is highly selective, with numerous trials conducted to achieve the ideal balance between structure, fruit, and aromatic expression. The final wine is further aged in bottle prior to release, ensuring integration and harmony.
