    Dark ruby red with purple reflections. Very savoury with intense aromas of cedar wood, tobacco and cardamom on the nose, followed by ripe blackberry and plum. Very appealing and balanced on the palate with good fruit and acidity, grippy tannins and a long, fruity finish.

    Terroir
    The 2021 “Coltassala” from Castello di Volpaia is a single-vineyard Sangiovese sourced from one of the estate’s most historic and elevated sites within Chianti Classico, in Tuscany. The Coltassala vineyard sits at altitudes approaching 500–600 meters, where cooler conditions and significant day–night temperature variation shape a wine of precision and structure.

    These elevations extend the growing season, allowing Sangiovese to ripen gradually while preserving its hallmark acidity and aromatic complexity. The result is fruit that balances ripeness with freshness, avoiding excess while maintaining depth.

    The soils are a classic composition of alberese limestone and galestro schist, interwoven with sandstone. These well-draining, mineral-rich soils restrict vine vigor and encourage deep root systems, producing berries of concentration and intensity. Limestone contributes brightness and tension, while galestro imparts a distinctive earthy and savory nuance.

    The 2021 vintage is widely regarded as exceptional in Chianti Classico, marked by a balanced growing season that delivered fruit of both concentration and clarity. In Coltassala, this translates into a wine that is structured, layered, and distinctly expressive of its high-altitude terroir.

    Winemaking & Technical Notes
    At Castello di Volpaia, “Coltassala” represents the pinnacle of estate Sangiovese, crafted with meticulous attention to both tradition and precision.

    The wine is produced entirely from Sangiovese, harvested by hand and carefully sorted to ensure optimal fruit quality. Fermentation takes place in stainless steel tanks under controlled temperatures, allowing for steady extraction while preserving aromatic purity.

    Extended maceration is employed to build structure and depth, with careful management to maintain balance and avoid excessive tannin extraction. The aim is to capture the full expression of the vineyard while preserving elegance.

    Following fermentation, the wine is aged in French oak barrels—typically a mix of new and seasoned wood—for approximately 18–24 months. This élevage contributes subtle layers of spice, cedar, and texture while integrating the wine’s tannic framework.

    The wine is then further refined in bottle prior to release, allowing its components to harmonize. Alcohol levels generally fall around 14%, supported by vibrant acidity and firm structure.

    The result is a Gran Selezione that reflects both the identity of Coltassala and the broader tradition of high-quality Chianti Classico.

    Tasting Notes
    The 2021 “Coltassala” shows a deep ruby color with garnet nuances. The nose is complex and lifted, opening with aromas of red cherry, wild strawberry, and plum, accompanied by floral notes of violet and rose.

    As the wine evolves, more intricate layers develop—dried herbs, tobacco, and leather emerge alongside hints of spice, cedar, and a subtle balsamic tone. A fine mineral thread adds clarity and depth.

    On the palate, the wine is medium to full-bodied, with a structured yet refined profile. A core of vibrant red fruit is framed by firm, finely textured tannins that provide both grip and elegance.

    Flavors of cherry, raspberry, and red plum are complemented by savory herbal notes and a touch of spice. The acidity is bright and energetic, giving the wine lift and precision while balancing its structure.

    The finish is long and layered, with lingering notes of red fruit, earth, and spice. The overall impression is one of harmony and depth, combining power with finesse.

    Food Pairing & Service
    Serve at 60–65°F (15–18°C) in a large red wine glass. Decanting for 1–2 hours is recommended to allow the wine to open and soften in its youth.

    This wine pairs best with savory, structured dishes. It works beautifully with roasted or grilled meats such as lamb, beef, or game, where its tannins and acidity complement both richness and texture. Traditional pairings like bistecca alla fiorentina or pasta with wild boar ragù highlight its Tuscan character.

    For a more nuanced option, mushroom-based dishes or aged cheeses such as Pecorino provide an excellent match, echoing the wine’s earthy and herbal complexity.

    Cellaring Potential
    The 2021 “Coltassala” has outstanding aging potential, with the structure and balance to evolve over the next 15–20 years.

    In its youth, the wine is defined by vibrant fruit and firm tannins, but over time it will develop greater complexity and nuance. Primary fruit will gradually give way to tertiary notes of dried cherry, leather, tobacco, and spice.

    The tannins will soften and integrate, while the wine’s acidity preserves freshness and structure. With proper cellaring, this wine will continue to evolve into a more refined and layered expression, showcasing the full potential of Sangiovese from this exceptional vineyard.
