Terroir
The 2022 Cabernet Sauvignon from Canard Vineyard is rooted in the alluvial soils of Napa Valley, where a combination of fertile valley-floor sites and well-draining gravelly deposits creates ideal conditions for Cabernet Sauvignon.Situated in the warmer stretches of the valley, the vineyard benefits from abundant sunshine during the growing season, allowing for full phenolic ripeness and deep flavor development. At the same time, cooling evening breezes—drawn inland from the San Pablo Bay—help to moderate temperatures and preserve acidity, ensuring balance within the fruit.
The soils are composed of gravel, loam, and sandy clay, deposited over centuries by the Napa River. These well-draining conditions naturally limit vine vigor and encourage the development of small, concentrated berries with thick skins—key to the wine’s depth of color, structure, and tannic profile.
The 2022 vintage reflects a warm, expressive growing season, resulting in fruit that is rich and concentrated, yet balanced by underlying freshness. The terroir ultimately yields a Cabernet Sauvignon that is both powerful and polished, capturing the essence of Napa Valley’s signature style.
Winemaking & Technical Notes
At Canard Vineyard, winemaking emphasizes a balance between traditional techniques and modern precision, with a focus on expressing the character of the vineyard.Grapes are harvested at optimal ripeness and carefully sorted before fermentation. Fermentation takes place in stainless steel tanks, where temperature control allows for a steady extraction of color, flavor, and tannin.
Extended maceration is often employed to build structure and depth, while gentle pump-overs ensure a refined tannin profile. The goal is to achieve richness without sacrificing elegance.
Following fermentation, the wine is aged in French oak barrels—typically with a meaningful proportion of new oak—for approximately 18–22 months. This aging contributes layers of vanilla, cedar, and baking spice, while integrating the wine’s structure and enhancing complexity.
The final blend is predominantly Cabernet Sauvignon, occasionally supported by small amounts of Bordeaux varieties depending on the vintage. Alcohol levels generally fall around 14.5–15%, balanced by sufficient acidity and well-structured tannins.
The result is a classic Napa Valley Cabernet—bold, layered, and refined.
Tasting Notes
The 2022 Canard Vineyard Cabernet Sauvignon presents a deep, inky ruby color with purple undertones, indicating concentration and youth. The nose is rich and expressive, opening with aromas of blackberry, black cherry, and cassis, complemented by notes of plum and dark currant. As the wine develops, secondary layers emerge—cedar, vanilla, and cocoa are interwoven with hints of tobacco, graphite, and subtle baking spice. A faint herbal nuance adds complexity and balance.
On the palate, the wine is full-bodied and structured, with a dense core of dark fruit framed by firm, finely grained tannins. Flavors of blackberry, black cherry, and plum are complemented by notes of mocha, licorice, and toasted oak.
Despite its richness, the wine maintains balance through a thread of acidity that provides lift and definition. The texture is smooth and polished, with a well-integrated structure that carries through to a long, persistent finish.
The overall impression is one of power and harmony, showcasing Napa Valley Cabernet at its most expressive.
Food Pairing & Service
This Cabernet Sauvignon pairs best with rich, savory dishes that complement its depth and structure.Grilled or roasted beef—such as ribeye, strip steak, or filet mignon—is a natural match, as the wine’s tannins and fruit richness balance the meat’s fat and char. It also pairs beautifully with braised dishes like short ribs or lamb shank, where slow cooking enhances both the dish and the wine.
For a complementary pairing, consider aged cheeses such as sharp cheddar or aged Gouda, which echo the wine’s intensity and structure.
Serve at 60–65°F (15–18°C) in a large Bordeaux-style glass. Decanting for 1–2 hours is recommended to allow the wine to fully open and soften.
Cellaring Potential
The 2022 Canard Vineyard Cabernet Sauvignon has strong aging potential, with the structure and concentration to evolve over the next 10–15 years. In its youth, the wine is defined by bold fruit and firm tannins, but with time, it will develop greater complexity and integration. Primary flavors will evolve into notes of dried blackberry, leather, tobacco, and spice, while the tannins soften and become more refined.
The wine’s balance of richness, acidity, and structure ensures that it will mature gracefully, offering a more nuanced and layered expression with age. For both immediate enjoyment and cellaring, this wine represents a classic and compelling Napa Valley Cabernet Sauvignon.
