This meticulously produced 750ml bottle showcases 100% Pinot Noir grown at high altitude in one of Burgundy's most distinctive terroirs. - Aroma: Highly perfumed and fragrant. Dominated by crushed cranberries, wild strawberries, and ripe red cherries, layered with complex whole-cluster notes of rosemary, cut grass, subtle violet, and earthy leather.
- Palate: Dry, light-bodied, and incredibly vibrant. It features a silky, rounded texture balanced by a sharp, crunchy mineral streak and high-altitude freshness that lingers with remarkable poise.
- Food Pairings: Pairs exceptionally well with lighter meat dishes such as roasted chicken, duck breast, pork tonkatsu, or mushroom tartlets.
- Finishing: The wine is bottled completely unfined and unfiltered.
- Fermentation: Grapes are chilled down to 12°C for a cold soak, followed by semi-carbonic maceration and ambient yeast fermentation in tank. Cap management is incredibly gentle, utilizing only minimal punch-downs at the very end of fermentation to avoid over-extraction.
- Aging: Matured for 12 months in neutral, used oak barrels (no new oak to protect terroir clarity), followed by an additional 3 months in tank before bottling.
- Finishing: The wine is bottled completely unfined and unfiltered.
- Sulfur (SO2): Extremely low intervention. Minimal sulfur is added only when racked and just before bottling, keeping total SO2 between a strict 20–50 ppm.
