     The Petit-Roy Bourgogne Hautes-Côtes de Beaune Blanc "Mainbey" 2023 represents a remarkable expression of low-intervention Burgundian winemaking, crafted by the visionary micro-négoce domaine of Seiichi Saito. This wine embodies the philosophy of a winemaker whose unconventional journey has shaped an extraordinary approach to viticulture and vinification. Born in China and raised in Japan, Seiichi Saito arrived in France in 2008 with a singular passion for understanding Burgundian wine at its deepest level. Before founding Domaine Petit-Roy in 2016, he spent years honing his craft at some of Burgundy's most prestigious estates—including the legendary Domaine Armand Rousseau, the benchmark Domaine Leflaive, and the refined Jacques-Frédéric Mugnier. These formative experiences instilled in him an unwavering commitment to excellence and authenticity. What truly distinguishes Saito's winemaking is his personal allergy to sulfur, a constraint that has evolved into a defining strength. Rather than viewing this limitation as a barrier, Saito has transformed it into a guiding principle—one that demands exceptional fruit quality, meticulous vineyard management, and a philosophy centered on purity and minimal intervention. Every decision in the cellar reflects this commitment: direct pressing, ambient yeast fermentation, extended barrel aging without added sulfites, and bottling without fining or filtration. The result is a wine of remarkable clarity and energy—a true expression of terroir and the winemaker's uncompromising vision. This is natural Burgundy at its most refined and purposeful.

    Grape Variety: 100% Chardonnay. 

    Sourcing: Grapes are meticulously selected and purchased from trusted grower friends who utilize sustainable or organic practices. 

    • Aroma: High-toned and expressive. It opens with crisp orchard fruit (green apple, Bosc pear), lemon zest, white floral notes, and hints of wet-stone minerality. Faint undertones of fresh brioche or honey add complexity without heavy oak presence. 
    • Palate: Highly linear, clean, and energetic. It drives forward with flavors of yellow citrus, crunchy pear, and a chalky, saline mineral spine. A gentle, creamy texture from the barrel aging balances the high, mouth-watering acidity. 
    • Finish: Lean, precise, and highly focused, carrying its tense mineral energy to a clean conclusion. 
    • Serving Temperature: Serve chilled between 8°C and 10°C (46°F–50°F).
    • Decanting: Not strictly necessary, but opening the bottle 30 minutes before serving allows the natural reduction to dissipate and lets the aromatics bloom.
    • Food Pairings: Pairs exceptionally well with grilled white fish, shellfish, chicken breast in light cream sauce, or aged, semi-hard goat cheeses.
