    The Cazé-Thibaut 'Naturellement' Extra Brut NV is a distinctive grower Champagne from the historic village of Châtillon-sur-Marne, crafted entirely from Pinot Meunier grapes in the Blanc de Noirs style. This wine embodies a philosophy of minimal intervention and respect for natural winemaking practices. Produced using organic farming methods, the wine ferments with native yeasts in a combination of barrel and tank, allowing the fruit to express itself authentically. The winemaker employs zero-to-minimal dosage and forgoes filtration, preserving the wine's natural complexity and texture. On the palate, expect a smoky, vibrant character with remarkable depth and textural complexity. The Pinot Meunier base delivers rich, earthy notes complemented by fine acidity and a persistent finish.     Appearance: Pale golden straw hue with persistent, ultra-fine, lively perlage. 
    Aroma: Smoky orchard fruits, crisp green apple, and fresh lemon citrus meld with underlying notes of toasted brioche, chalky minerality, and subtle spice.
    Palate: Bone-dry, vibrant, and precise with high tension and a medium-plus acidity. Flavors of bruised yellow apple, tart pink grapefruit, and salty wet stone carry into a long, layered, vinous finish. 
    Grape Variety: 100% Pinot Meunier (Blanc de Noirs). 
    Fermentation: Slow, cold native yeast fermentation split across stainless steel tanks and seasoned oak barrels (228L, 330L, and 350L sizes). 
    Malolactic Fermentation: Natural and unforced, often partial due to cool cellar temperatures.
    Lees Aging: Aged approximately 24 months sur lattes (on the lees) before release. 
    Dosage: Extremely low to zero dosage (Extra Brut / Brut Nature style) determined by blind tasting per base year to preserve absolute structural purity.
    Filtration: Unfined and unfiltered.
