The 2020 Todos, as the name says, is Jonata's red blend. Although an entry-level offering, Todos punches above its weight. Dark cherry, chocolate, new leather, licorice, spice and scorched earth all run through this Syrah-based blend. I loved it. Drinking Window: 2023 – 2030

Matt Dees and his team at Jonata presented a stellar set of wines this year. The range has been pretty much the same since the beginning. The Sangre de Jonata is mostly Syrah, while Fenix, Alma de Jonata and Desafio de Jonata are Bordeaux blends based on Merlot, Cabernet Franc and Cabernet Sauvignon. The biggest change is with the Bordeaux wines, which were once true blends, but in 2020, they are heavily focused on single varieties. Whether that is attributable to a maturation of the vineyards or the latest evolution of thinking here, or some of both, the reality is that the 2020s are incredibly exciting, viscerally thrilling wines on a level I have rarely seen in Santa Barbara. - By Antonio Galloni on June 2022

Winemaking
The 2020 Todos is a proprietary red blend composed of approximately 57% Syrah, 24% Cabernet Sauvignon, 10% Petite Sirah, 6% Cabernet Franc and the remainder a mix of small-lot red and white varieties.
In the cellar, Jonata utilized predominantly neutral French oak barrels (82%) alongside a modest portion of new French oak (18%) for this vintage.
The winemaking philosophy is to let the vineyard speak: the sandy soils, low vigor and balanced vine health come together under careful viticulture and minimal manipulation to yield a wine with both power and finesse.

Appearance: Deep, rich ruby-purple in the glass, hinting at saturated fruit and good extraction.

Aroma: The nose opens with dark berry fruit—black raspberries, blueberries and wild black cherries—then layers in hints of fresh plums, cocoa nibs, dark chocolate, peppercorn spice, and subtle savoury notes of leather, tobacco and char.

Palate: On the palate the wine is full-bodied yet remarkably balanced. The fruit core of black and blue berries is wrapped with velvety tannins and a fine, powdery texture (a reflection of the sandy terroir). You’ll find flavours of black plum skin, licorice, espresso bean, and a streak of graphite minerality, followed by a long finish marked by dark chocolate and black pepper spice. 

Structure & Aging: With an alcohol of ~14.5% and solid tannic backbone, this wine has excellent ageing potential—drink from now through the next 8-15 years to enjoy both its youthful exuberance and the evolution toward secondary complexity.

Food Pairing & Serving Suggestions

• Grilled rib-eye or porterhouse steak with cracked pepper and a dab of herb butter.
• Lamb ragù pappardelle, or slow-roasted leg of lamb with rosemary and garlic.
• Smoked beef brisket or barbecued short ribs—something with rich savoury flavours to match the wine’s intensity.
• For a vegetarian option: roasted portobello mushrooms with balsamic glaze, or grilled halloumi with charred eggplant and a lentil-tomato stew.
  Serve around 16-18 °C (60-64 °F). It can benefit from decanting for 30-45 minutes to open up the aromatics and soften the tannins
