    The 2023 Eleni et Edouard Vocoret Séchet Chablis Premier Cru represents an extraordinary debut from this passionate husband-and-wife winemaking duo.     Vineyard & Terroir
    Location: The Séchet parcel sits on the sunny, southeast-facing slope of the Vaillons hill.
    Soil: Deep marl soil packed with ancient marine fossils over Kimmeridgian limestone.
    Style: Wines from this specific slope tend to be slightly richer, warmer, and spicier than other Chablis sites. 
    Winemaking Style
    Fermentation: Hand-harvested grapes are pressed gently and fermented using only native, wild yeasts in stainless steel tanks.
    Aging: Aged for about 12 months in very old, seasoned oak barrels (no new oak is used) to keep the wine crisp and salty.
    Bottling: Bottled without fining or filtering to preserve its raw, natural character. 
    Taste Profile
    Aroma: Scents of fresh green apple, ripe citrus, beeswax, and a distinct salty oyster-shell snap.
    Palate: Medium to full-bodied with a smooth, satiny texture.
    Finish: Taut, dry, and very mineral with a long, chalky, and refreshing saline kick.
