    Sourced from old-vine Chardonnay parcels in Chablis, this wine comes from some of the region’s most limestone-rich Kimmeridgian soils—packed with ancient marine fossils that define classic Chablis minerality. The cool continental climate, with pronounced seasonal variation, allows for slow ripening and naturally high acidity. These conditions produce fruit that is taut, focused, and deeply expressive of its chalky, mineral-driven origin.

    Winemaking & Technical Notes
    This is a traditionally styled Chablis made with an emphasis on extended aging and structure. Fermentation and maturation take place in stainless steel, but the defining hallmark of Defaix’s approach is long élevage on fine lees—often significantly longer than most producers—building depth, texture, and complexity. The result is a wine that is intentionally slow to open, designed for development rather than immediacy.

    Tasting Notes
    Pale gold in the glass, the 2022 opens with restrained aromas of lemon zest, green apple, crushed oyster shell, and wet stone. With air, subtle layers of white flowers, hazelnut, and saline minerality emerge. The palate is firm and structured, with bright acidity and a dense, chalky texture. Citrus and orchard fruit are tightly wound around a pronounced mineral core, leading to a long, linear, and precise finish.
