    This estate Cabernet Sauvignon comes from the heart of the Oakville AVA in Napa Valley — a region renowned for producing some of the world’s most iconic Cabernet Sauvignon wines. According to the winery, the vines are grown under organic practices and mature on soils that allow for good drainage and concentration of flavour. The wine’s style reflects both modern intensity and classic structure from this distinguished appellation.

    Winemaking
    Estate Cabernet Sauvignon is aged 24 months in 50 % new French oak barrels. The result is a wine built for both power and refinement, capturing the depth of dark fruit while preserving a framework of tannin and acidity.

    Tasting Notes

    • Appearance: Deep ruby-garnet with youthful vibrancy and clarity.
    • Aroma: Aromas of cassis, black cherry and ripe plum dominate initially, followed by hints of toasted vanilla, smoke and cedar from barrel influence. A subtle under-note of black currant and dark chocolate emerges with aeration.
    • Palate: Medium-to-full body with a generous fruit core — blackberries and dark cherries — framed by fine-grained tannins. There’s a savoury edge of tobacco leaf and graphite, complemented by a smooth oak-driven layer of mocha and spice. The finish is long, structured and polished.
    • Structure & Ageing: With its tannic backbone, oak-ageing and estate vineyard provenance, this wine is suitable for short-to-medium-term ageing. Drinking well now with decanting; it will evolve nicely over the next 8-12 years (or more under ideal cellaring).

    Food Pairing & Serving Suggestions

    • Serving temperature: Ideal at around 16-18 °C (60-64 °F). If young, decanting for 30 – 45 minutes enhances aromatics and softens tannins.

      • Grilled rib-eye or New York strip with herb-garlic butter and cracked pepper.
      • Braised lamb shoulder in rosemary-garlic jus or venison medallions with a red-wine reduction.
      • Mature hard cheeses such as aged Manchego or Comté, or charcuterie featuring smoked meats and black-olive tapenade.
      • For vegetarian fare: grilled portobello mushroom steak, or lentil ragù with wild mushrooms and herbs to mirror the wine’s savoury character.
